“Crawfish Pho? Are they out of their minds?”

Yes we are. We wanted to see what would happen if we added some Cajun flavors to one of our favorite foods. Pho. Pho is a traditional Vietnamese Noodle soup. Noodles are normally served in a rich broth meaty broth with meat and served with fresh basil, fresh beansprouts, scallions, sliced onion, sliced jalapeno, cilantro, and lime slices. Instead of using the traditional beef or chicken, we use Andouille Sausage and loads of crawfish tails. . It’s a delicious and inexpensive lunch and pretty healthy too.
